felt like I found a golden ticket stumbling across this butternut squash pizza crust @traderjoes today ✨ tbh, I probably should’ve made each of us our own full pie, but despite it not being the most filling on it’s own, it was absolutely delicious!
I started by baking the crust by itself for about 10 min on each side. meanwhile, I whipped up a homemade garlic sauce by blending 3 tbsp @vitalfarms unsalted butter, 1/3 c water, 1 tbsp garlic powder, 1 tsp sugar, 1 tbsp arrowroot, and salt to taste 👌🏽
on top are Roma tomatoes, chopped asparagus, red onion, a bit of crumbled @kitehillfoods ricotta, and cracked black pepper. stick it under the broiler for ~5 min, then add micro greens, more cheese, and try to take a picture before Brenen reaches for more 🤪 #pizzagang #glutenfreegang #veggiegang #tenikatime

tossed them into last night’s pesto pasta and both boys wanted seconds 😏
I’m on week 3 of my #veggielife, so this protein packed pesto sauce was perfect for what would be an otherwise carb heavy meal 👊🏽
I used @traderjoes #glutenfree brown rice + quinoa noodles, but this pesto recipe would be amazing on anything!

3 garlic cloves, minced
3 packed cups of kale
a few sprigs of Basil (optional)
3/4 c hemp seeds
juice from 1 lemon
1/4 c olive oil
1 tsp sea salt
1/2 tsp pepper
1/2 tsp red pepper flakes (optional)
✨blend everything in a food processor, adding more lemon, salt, and pepper to taste...enjoy with cooked pasta + peas! 😋
